My Favorite Summer-time Recipes

Lime Cilantro Dipping Sauce-

this is delicious with shrimp, chicken fingers, or even carrots and celery!

I grow cilantro in my herb garden, just outside my back door, so this is a breeze to make.

1/2 cup low salt soy sauce
2 Tbsp. chopped cilantro
2 Tbsp. lime juice
1 Tbsp. olive oil
1/4 tsp. sugar

Combine soy sauce, cilantro, lime juice, oil, sugar,

& 1 Tbsp water in a small bowl. Mix well until sugar is dissolve.

Refrigerate until ready to serve.

Sauce can be prepared up to 2 days in advance and stored,

covered, in the refrigerator.



Green Tomato Salsa -
The tomatoes in my garden are not yet red, but I can't resist picking some

and making this wonderful relish for future picnics and cookouts.

1 lb. green tomatoes, chopped
2 Tbsp. crated onion
1 jalapeno chili, seeded and minced
1/2 cup chopped cilantro
2 Tbsp lime juice
1/2 tsp. salt
1/4 tsp pepper
2 large avocados, pitted, peeled, and cut into chunks

Combine tomatoes, onion, chili, cilantro, lime juice, salt, and pepper in a large bowl.
Add avocado to bowl and toss ingredients together. Season with additional salt & pepper.
Cover & refrigerate for at least 30 minutes before serving.
Serve with tortilla chips, or fresh cut vegetables like cucumbers, & red peppers.
